Each morning, as golden sunbeams stretch across the waking streets of Thousand Oaks, Five07 comes to life, opening its doors to inspire and serve up “coffee and community” to loyal regulars and new faces alike.For owners Sean and Amber McCarthy, coffee and community isn’t just a catchy phrase; it’s a core principle guiding each decision they make. “When a new opportunity comes up, we ask ourselves whether it will help us serve even better coffee or continue to enrich a healthy sense of community here in Thousand Oaks. If it doesn’t, we pass,” Sean shares. 

Both Sean and Amber grew up in Thousand Oaks, where they felt inspired by its natural beauty and strong sense of community. “It’s a special place that feeds the soul and invites you to nurture it back,” Sean says. "We knew we wanted to continue writing the future chapters of our story together here,” he adds. Attending California Lutheran University and Moorpark College provided an opportunity to pursue their college education while staying connected to the community that shaped them.

While juggling college, full-time jobs, and side hustles, Sean and Amber considered how they might contribute something meaningful and lasting to the fabric of their hometown. Weekend getaways exploring little enclaves in other communities inspired their community-focused coffee shop concept. They realized many of their favorite finds were independent coffee shops; vibrant and artistic spaces where people of all ages and different walks of life gathered. Why not have a place like this in Thousand Oaks, they thought.

In 2018, Five07 Coffee Bar + Eatery opened at 2036 E Avenida de los Arboles. Residents raved about the high-quality coffee and menu featuring delicious crepes, toasts, and smoothie recipes incorporating a variety of fruits and vegetables. Vegan, gluten-free, and organic enthusiasts celebrated, too. “Collaboration with other local entrepreneurs and artists has really helped us create the type of space we imagined. It could never happen in a vacuum,” Amber notes. Customers will find locally sourced baked goods, granola, fruits, and more on the menu. Over the years, Five07 has also worked with local artist and Thousand Oaks resident, Mouserawk, who helped Five07 find its unique visual identity and branding. 

In January 2024, Sean and Amber expanded to a second location called Five07 Coffee Bar at 2955 Thousand Oaks Boulevard, offering an abbreviated menu of equally fantastic eats to go along with your favorite coffee, espresso, Matcha, Chai, or other preferred beverage. They even offer tasting flights!  

When asked about the origin of the name Five07, Sean tells a story about when they were still developing the business plan: “It was strange. There was this period where I was working through the details of the plan before the sun came up. For some reason, any time I would glance over at the clock it was 5:07am.” It became symbolic of all the hard work and commitment being put in to create something uplifting and inspiring to share with the community.
